I can almost smell this as I read it. And will have to admit, I’ve never been a huge fan of pork loin as the only pork loin I’ve ever really liked was one slow cooked on the grill. I guess that’s what they call it, slow cooked, because it took my uncle well over 12 hours to cook it. Regardless, this is most definitely a holiday recipe I’m going to try. Our family, because we’re so big, normally celebrate the week before and the week after Christmas. This will be one of the dishes I serve. Wait until you see the picture of the finished loin. Mmmm
Barbecued loin pork Recipe
This is a great way to do pork on the barbie. I’ve cooked this a number of times and it’s always been a hit, bit hard to keep the BBQ at the right temp sometimes and some of the crackling may burn but always enough to salvage and the meat is moist and delicious. I also included a variation of the cranberry sauce that is recommended with it
Ingredients of Barbecued loin pork Recipe (serves 12)
1/4 cup olive oil
1 lemon, rind finely grated
1 small red chilli, deseeded, finely chopped
2.5kg to 3kg rolled loin pork
1 1/2 tablespoons fine table salt
